During the first bedroom scene with the King and Queen, the king goes to stand on the balcony where he meets the Fairy Godmother. The queen asks where he is going, and the king replies: "Bit of trouble from the old crusade wound, gonna go outside and walk it off" while holding his knee. This is a reference to John Cleese's (King) character in "Fawlty Towers" (1975), Basil Fawlty, who has a war wound in the exact same place, and also uses it as an excuse to get out of a situation.

In the scene where the giant gingerbread man takes the "Starbucks" coffee cup, you see a crowd of people flee from that Starbucks to another one across the street. This refers to a joke made popular by Lewis Black. (more info here: Starbucks Joke).

In the scene in the Fairy Godmother's workshop, there are two pictures placed next to each other. One picture is a profile of a mean-looking woman, and the picture next to it is of a profile of a witch. This is what Miss Gulch looks like when she transforms into the Wicked Witch of the West in "The Wizard of Oz" (1939).

The first time Shrek enters Fiona's bedchamber, while she is talking to the Fairy Godmother, he starts to pack her stuff. Look at the poster on the wall. It features a blond singer, a dark-haired "guitarist" and it says "Stonehenge."
